Pretty soon I'm going to need a baking icon.  
I made the Grain-free "Oatmeal" Chocolate chip cookies last night. Zomg. They are GOOD. Like ridiculously.

I also made my favorite dish last night. Baked salmon with Cavender's Greek seasoning and gluten-free organic brown rice with green onions and shredded carrots. *drools* It's even better the next day for left overs. ...which I just had for lunch :)

My goal for this week is to find a healthy chicken recipe. I'm so tired of the same old chicken.

I have a four-ingredient (five if you include the rice) Chinese chicken dish that is so amazing we make it several times a year.

Oven 400

Stir together in glass dish: 1 bottle catalina dressing. 1 jar apricot preserves. 1 envelope onion soup mix.

Dredge chicken strips in the mixture and bake (in the mixture) until chicken is done. Takes my oven anywhere from 20-30 minutes. Serve over rice.

Leftovers are wonderful. We put the leftover mixture in the freezer and use it with another batch of chicken later on.

I love coconut in cookies.

(Incidentally, I only now just figured out I didn't have a regular Easy Bake oven as a kid - we had the Suzy Homemaker version, which I think is far more rad. I'm sure my eldest sister was the original recipient. Toys were hand-me-downs along with clothes, for sure.)

haha I think I had a couple different hand-me-down Easy Bakes or whatnots. No idea the kind, though.

Most of my attempts failed either way. haha

I only figured it out when the topic came up with someone privately, then I looked up Easy Bake ovens and the one our house had looked nothing like the vintage pictures. The one in my icon is what we had and we used to make cookies in 1/4 c. metal measuring cups. Turned out well enough for us. :)

Ohhhh...yum. I'm so making these. We even use that nut butter. Hey, this is pretty handy you giving up gluten. I love the recipes!
